up north: a visit to the CIA (no, not that one; the other one) and surroundings. 10.22-23.03

tim & i finally managed to take a trip up to see his alma mater, the culinary institute of america. we drove around the area a bit to take in the annual leaf-turning.

the caterina de medici restaurant at the CIA. there are 4 restaurants, all operated by the students. this is the italian one. tim's sitting in front of a vertical meat slicer that can slice your prosciutto so thin, you can read the newspaper behind it. it's got a special mechanism that prevents fat from melting (which is the problem with more conventional, less expensive slicers with spinning blades).

various kitchens at the CIA:

i think this guy was doing something with radicchio. .

a pastry kitchen. one of many. actually, a whole building is devoted to pastry & baking.

a skills class -- one of the first classes you take at the CIA where you get to pick up a knife.

on the way to new paltz, we espied this cool little field of pumpkins.

like most of the northeast, the autumn leaves in the catskills are so beautiful. it's difficult to capture that in a moving vehicle, but i tried.
